This is an easy and delicious recipe for homemade Mexican enchilada sauce. This homemade enchilada sauce can be served over enchiladas, stuffed poblano peppers, burritos, tacos, nachos and many other Mexican dishes. Enjoy.
The Best Homemade Mexican Enchilada Sauce
4-6 dried Mexican Chilies
2 cups hot chicken broth
1 – 28oz can dice or crushed tomatoes
4-5 large roasted red bell peppers
5-6 cloves garlic
Snip ends of chilies and deseed. You may have to
open up the peppers. Cover the chilies with hot
chicken broth (or veggie broth or water) and let
set for 30 minutes until tender.
Place chilies and juice in blender or food
processor. Add tomatoes, roasted bell peppers,
and garlic. Blend until pureed.
3 tbsp olive oil
3 tbsp flour
In a saucepan over medium heat add olive oil and
flour. Cook for 2-3 minutes constantly stirring.
Add in pureed chili mixture and stir well.
3 tbsp chili powder
1 tsp cumin
1 tsp thyme
1 tsp chipotle powder
1 tsp sugar
1 tbsp oregano
salt and pepper to taste
Add above spices to sauce and stir well.
Bring up to heat and let simmer for 30
minutes or until reduced.
