Slow Cooker Mexican Quinoa :

This recipe is full of stuff that is good for you, plus it’s easy to throw together and requires no “hands-on” cooking time. The beans and quinoa have fiber and protein, the butternut squash and sweet potatoes have vitamin C, vitamin A, potassium, folate, and tons of other great nutrients.


2 chopped sweet potatoes
1 small diced butternut squash
1.5 cup cooked black beans
1 can enchilada sauce
1 cup frozen or fresh corn
1 cup quinoa
2 cups water
1 diced onion
2 cloves minced garlic

1. Combine all ingredients in a slow cooker and cook for 2 hours on high or 3-5 hours on low.
2. Serve with avocado and lime juice.
