2-3 skinless chicken breast chunks
1 tsp cumin
1 tsp chili
1 tsp paprika
sliced mixed peppers
2 large tomatoes, sliced
1 large onion

Spray a non-stick pan with low-calorie cooking spray and place over a medium-high heat. Add the chicken and stir-fry for a few minutes until sealed. Add the spices and coat the chicken before adding the peppers, tomato onion, and garlic. Stir-fry for a further 4-5 minutes over a high heat until the chicken is cooked.
Serve just as it is or with rice, chunky potato wedges or homemade coleslaw (cabbage, carrot, and onion mixed with fat-free plain yogurt)
