Simple Healthy Vegan Burrito Recipe :

So here is my super easy to make vegan burrito recipe (full recipe below). This is an amazing recipe to eat straight away or to chuck in the fridge for an on the go meal for school/work/uni. Feel free to substitute any ingredients for your favourites.


120g rice of choice (I used sprouted brown rice)
1/2 tin of mixed beans (or beans of choice)
sprinkle of paprika, cayenne and garlic granules

1 avocado mashed
1/2 small red onion
1/2 red chilli
handful jalapeños
garlic granules
(This mixture will make about 4 burritos)

Sundried tomatoes
Salsa (home made or bought, I didn’t have time to make my own on this occasion)
Soya yoghurt
Could also add your favourite vegan cheese or nutritional yeast
