What’s great about this arroz con pollo recipe is that it’s a one-pot casserole. Goes from the oven to the table. You are going to love how the rice comes out super moist and delicious.With 2 cups of rice, you could even add more chicken say 8 to 10 pieces would work too.
This easy chicken and rice dish is a great one to bring to a party or potluck dinner.

2 cups long grain rice
1 yellow onion finely chopped
2 Tbsp. olive oil
6 or more chicken thighs, skinned (you can use bone-in or debone thighs and cut into 1 – 2-inch pieces) I think it’s nice not to have to deal with bones in a casserole.
1 red bell pepper, chopped small
2 cloves, minced
3/4 cup tomato puree
1/2 tsp. ground cumin
2 tsp. sea salt
4 ounce can of green chile, diced
2 3/4 cups chicken broth
3/4 cup frozen peas or corn
10 to 12 ounces mild cheddar cheese, grated
