Hi Fusion Fam! Happy Recipe Friday! My husband’s Vietnamese so we eat a lot of steamed rice and rice noodles. However, I’m half Mexican so Mexican Red Rice is a true comfort food for me, especially when made from scratch and with some corn. Ay Vida Mía!

2 Serrano Chili Peppers
3 Garlic Cloves
1/2 cup Diced Onions or ~1/2 Large Onion
4 tbsp. Chicken Bouillon (to taste)
1 tbsp. Cumin
1 1/2 cup Chicken Broth or Water

Mexican Red Rice:
1 cup Long Grain Rice or *Medium Grain (Reference Notes)
4 tbsp. Vegetable Oil
1 tbsp. Unsalted Butter
1/2 cup Diced Onions or ~1/2 Large Onion
1/2 cup Corn Kernels (Carrots, Peas, or a combination of can be used)
2 tbsp. Water (to sauté Onions & Corn Kernels with)
2 cups of Red Sauce

Garnishes: Cilantro or Limes
