Spanish Rice – or “Grandma’s Orange Rice” as Molé Mama’s sons call it – is simple to make and delicious with crunchy tacos, burritos, Mole Rojo, you name it! By first frying the long grain California rice in a hot skillet with peppers and diced onions, we establish a rich flavor throughout the dish.
Minutes later, when the grains are golden brown and toasty, watch how Molé Mama submerges the fried mixture in water, tomato sauce, garlic, and spices. The tangy aroma that fills your kitchen at this point is a truly a culinary delight!
After the moisture has cooked off and the long grain rice has absorbed the tomato garlic cocktail, your homemade Spanish Rice is ready to serve! To add a little more kick the end result, add more spicy peppers to the white rice in the very beginning of the recipe.
Molé Mama has fond memories of eating this rice with just about everything her mother cooked. She compares it to American’s fascination with bread or toast: a versatile and filling starch to accompany any sauce or soup combination!
