Healthy Tortilla Soup Vegan Meal Prep Recipe :

Recipe :
1 onion, chopped
3-4 zucchinis, chopped into bit sized pieces
2 cans diced tomatoes
2 tbsp taco seasoning
1/2 tsp garlic powder
1/2 red pepper flakes
3 cans of beans, drained and rinsed
1 cup frozen corn
4-6 cups water

Garnish:
cilantro
chopped onions
avocado
lime juice

In a large pot, cook 1/2 of the onions (reserve the remaining half for garnish) with a 1/4c of water, taco seasoning, garlic powder, and chili flakes over medium high heat. Cook for 2-3 minutes, stirring occasionally.

Add zucchini, tomatoes, beans, and water and bring to a boil.

Once boiling, reduce heat to low and cover. Simmer for about an hour, stirring occasionally.

Add more water if you want a thinner soup, less if you want a more hearty vegetable stew. More water may require adding additional seasoning and/or salt.

Serve with lime juice, chopped onions, cilantro, avocado, and tortilla chips and enjoy!
