Easy Mexican Chicken Casserole

Ingredients:
2 teaspoons olive oil
1/2 cup chopped yellow bell pepper
1/2 cup chopped onion
2 1/2 cups cooked chopped chicken
1 (10 3/4-ounce) can cream of chicken soup
1 (10 ounces) can Rotel (tomatoes with green chillies)
1 (15 ounces) can pinto beans
1 tablespoon taco seasoning
1 1/2 cups shredded Monterrey Jack cheese
1 cup crushed Doritos

Directions:
Preheat oven to 350 degrees. Heat olive oil and cook bell pepper and onion until translucent. Combine vegetables, chicken, soup, tomatoes, beans, seasoning, and 1 cup of cheese into large bowl. Coat 9×13 with nonstick cooking spray and pour chicken mixture in baking dish. Cover with foil (I didn’t) and bake for 30 minutes. Uncover, sprinkle with remaining cheese and crushed Doritos
