Burritos: Quick & Easy Vegan Recipe :

Ingredients :
soft burrito wraps
rice
frozen corn
corn chips
salsa
soaked black beans
onion
avocado
spinach
capsicum
lettuce
carrots
sun-dried tomatoes (optional)
coriander
parsley
salt

Method :
1. Cook Rice
2. In a frying pan with a little water heat up diced onion, diced capsicum, corn, parsley, and coriander. Then take off heat and empty into a bowl. (you can set aside some capsicum, coriander, onion and the carrot to keep fresh to add to your burrito with the cooked food)
3. Cook soaked beans in a thin layer of water for a few minutes until soft with a little Herbamare or salt. Then take off heat and empty into a bowl.
4. Slice and rinse lettuce and spinach.
5. Slice or mash avocado( to make it spreadable)
6. Crush corn chips into small pieces.
7. Now put your burrito together in any way you like.
