Hello! This video shows how to make Mexican Rice. It is used as a side dish or a main dish for a vegetarian.

The Recipe
1 Tablespoon of Olive Oil
1/4 Teaspoon of salt, or to taste
2 Tomatoes (remove the seeds and strain off the juice for more flavor, place the juice in a blender and blend until tomato sauce)
3 Cups of chicken broth (low sodium) or water
1 1/2 Cups of long grain white rice
1/2 Cup of green peas
1 Diced carrot
1/4 of a small onion (chopped)
1 Chopped garlic clove

Instructions for making Mexican Rice

Fry rice until it is golden brown, then add the garlic and onion, stir for a few seconds, next, add the tomatoes sauce. Stirring adds the carrot and the green peas, mix everything and add the chicken broth or water. Let it boil and then taste the salt. Reduce the heat to low, cover the pan and cook for 15 -16 minutes, you can stir it once in a while before the liquid is absorbed and the rice is tender. When the rice is done turn off the heat and wait a few minutes. Enjoy!
